Mmoire is aged for a minimum of 36 months on the lees (sur lie), giving it a silky structure, fine persistent bubbles and a depth rarely found in champagnes in this price range. In the glass it appears with a beautiful golden color and a vibrant mousse. The aroma is elegant and nuanced with notes of white flowers,
