It has an exceptionally low acidity (0. 17 0. 20) and an intense flavour profile, with notes of freshly cut grass, almond, tomato and artichoke, enriched by pleasant bitter and spicy undertones. The olives are harvested at the optimum moment and cold pressed (<27C) the same day.
